BERRY MARGARITA CUPCAKES RECIPE

Berry Margarita Cupcakes Recipe: A fun summer cupcake filled with delicious margarita flavors and Bacardi Mixers and topped with sensational berry buttercream.

INGREDIENTS

For the Cupcakes:

  • 1 stick unsalted butter room temperature
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1½ cups cake flour
  • 2 tablespoons grated lime zest
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup Frozen BACARDI® Mixers Margarita flavor
  • 1 tablespoon tequila or freshly squeezed lime juice
  • 2 teaspoons fresh lime juice
  • 1 tablespoon vegetable oil

For the Buttercream:

  • ½ cup mixed blackberries and strawberries
  • 1 cup unsalted butter room temperature
  • 3 ½ cups confectioner’s sugar
  • ½ teaspoon pure vanilla extract
  • Pinch salt
  • Optional: sugar crystals for decoration

INSTRUCTIONS

For the Cupcakes:

  1. Preheat oven to 350 degrees, and fill a muffin pan with cupcake liners.
  2. Add butter to bowl of standing mixer and beat on medium high speed. Slowly pour in granulated sugar and continue to mix until light, fluffy and well combined.
  3. Add in eggs, one at a time.
