Chocolate Raspberry Cream Tarts

A decadent Chocolate Raspberry version of the traditional, beautiful fruit & cream tart

INGREDIENTS

Chocolate Pâte Sablee

  • 2 cups all purpose flour
  • 3/4 cup almond flour
  • 1/4 cup  cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter softened
  • 3/4 cup powdered sugar
  • 1 large egg
  • 1 large egg yolk

Chocolate Diplomat Cream

  • 1+1/3 cups whole milk
  • 1/3 cup granulated sugar
  • 2 tablespoons  flour
  • 2  tablespoons cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla bean paste or vanilla extract
  • 1 cup dark chocolate chopped into small pieces
  • 1 cup heavy cream cold
  • 2 tablespoons  cocoa powder
  • 1/4  cup  powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon powdered gelatin
  • 1 tablespoon cold water

Dark Chocolate Raspberry Ganache

  • 1 cup dark chocolate pieces
  • 1/2 cup heavy cream
  • 3 Tablespoons freeze dried raspberries crushed into powder

INSTRUCTIONS

Chocolate Pâte Sablee Instructions

  1. In a bowl, whisk together the AP flour, almond flour, cocoa powder and salt. Set aside
  2. Beat the butter and powdered sugar in the bowl of a stand mixer with the paddle attachment until light and fluffy
  3. Beat in the egg & yolk one at a time. Mixing until they are completely combined before adding the next. Scrape the bowl several times.
