Gingersnap Cookies

  • 2 cups flour (we use einkorn)
  • 3/4 cup butter, room temperature
  • 1 cup sugar
  • 3/4 cup molasses
  • 1 egg
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 2 tsp ginger, ground

  1. Preheat oven to 375°F
  2. In the bowl of an electric mixer, combine the flour, baking soda, and spices. 
  3. Add the butter, sugar, and molasses to the dry mix and process until well combined.
