PUMPKIN PIE COFFEE CAKE

Pumpkin Pie Coffee Cake with a delicious crumble topping is the perfect homemade sweet treat to have with your morning coffee or for dessert!

Ingredients

For the cake:

  • 1 cup pure pumpkin puree
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup milk
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tbsp pumpkin pie spice
  • 2 cups all-purpose flour

For the streusel topping:

  • 2 tbsp butter melted
  • 1/2 cup brown sugar packed
  • 1/2 tbsp cinnamon
  • 2 tbsp all-purpose flour
  • 1/2 cup chopped pecans

Instructions

For the cake:

  1. Preheat oven to 350F degrees.
  2. Spray an 8 x 8" pan with nonstick cooking spray.
  3. In a medium bowl, combine pumpkin, oil, vanilla and milk until smooth.
  4. Then stir in sugar, baking powder, salt and pumpkin pie spice.
